- Makes 2 burgers
- 10 min prep
- 10 min cook
What you need
- 1 lb ground beef, 80/20
- 4 slices bacon
- 4 slices pepper jack or cheddar
- 2 brioche or potato buns
- Salt and pepper
- Pickles
- 1/4 cup mayo
- 1 tbsp Little Menace Hot Honey, plus more to drizzle
How to make it
- Stir the mayo and hot honey together. Set aside.
- Cook the bacon in a cast iron skillet until crisp. Move it to a paper towel and pour off most of the fat.
- Divide the beef into 4 loose balls. Toast the cut sides of the buns in the skillet, then set them aside.
- Turn the heat to high. Add 2 beef balls and smash each one flat with a sturdy spatula. Season with salt and pepper.
- Cook 2 to 3 minutes, until the edges are deeply browned and crispy. Flip, add a slice of cheese to each, and cook 1 more minute until cooked through. Repeat with the other 2.
- Build it: bottom bun, hot honey mayo, two patties, bacon, pickles, a drizzle of hot honey, top bun.
Menace tip: Drizzle the hot honey right on the bacon. Sweet, salty and spicy in one bite.
